Ingredients
Muffin mix
- 1 cup almond meal I use Honest to Goodness Insecticide freeHonest to Goodness Insecticide free
- 1 cup gluten-Free Oats OR add 1 extra cup almond meal
- 2/3 cup buckwheat flour I use Honest to Goodness Insecticide freeHonest to Goodness Organic
- 1/3 cup butter melted or coconut oil (for dairy-free)
- 4 medium eggs pastured if possible
- 8 med apples peeled, cored
- 4 Tbsp water
- 3 Tbsp raw honey or maple syrup
- 2 tsp baking powder
- 1/2 tsp bicarb soda
- 1.5 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp celtic sea salt or himalayan salt
Crumble Topping
- 1/2 cup almond meal I use Honest to Goodness Insecticide freeHonest to Goodness Insecticide free
- 1/4 cups coconut sugar
- 1 tsp ground cinnamon

Instructions
Muffin Mix
- Preheat oven to 180 Deg C (350 F).
- Prepare muffin tins - either by adding muffin cases or greasing the pan with butter or coconut oil.
- Combine dry ingredients (almond meal, buckwheat flour, GF Oats (if using), baking powder, bicarb, cinnamon, nutmeg and salt) in a bowl and stir to combine.
- Melt butter or coconut oil and add to dry ingredients.
- Crack eggs into a seperate bowl and whisk to combine. Add to dry ingredients.
- Peel and core around 8 medium apples. You may like to set aside a small amount of sliced apple with skin on (approx 1/4 apple) to decorate muffins before cooking.
- Dice 2 of the apples and add to main bowl (with all the other ingredients).
- Slice the remaining 6 apples. Place together with 4 Tbsp water - cook for a few minutes either in a saucepan on cooktop (using low heat) or microwave for around 4 minutes.
- Once cooked blend to create a puree.
- Add to other ingredients.
- Mix all ingredients until well combined using a wooden spoon.
- Spoon into muffin trays.
Crumble Topping
- Combine almond meal, coconut sugar and ground cinnamon in a small bowl. Combine using a fork.
- Once muffins mix in in muffin trays. Spoon Crumble topping over the top of each muffin.
- Add additional sliced apple on top.
- Bake for 15-20 minutes until golden on top.
