To make these lunchbox friendly simply sub out the almond meal for seeds (I like a combo of pepitas and sunflower seeds).
Ingredients
- 12 medium Medjool dates organic if possible
- 2 Tbsp cocoa or cocoa I use Honest to Goodness Organic
- 2 cups almond meal Or for nut-free use a combination of seeds
- 0.5 cups desiccated coconut
- 2 Tbsp coconut oil optional

Instructions
- Place dates into thermie or blender first and blend for 1 minute, speed 8.
- Add remaining ingredients to thermie or blender.
- Blend on high (Thermie speed 10) for 1-2 minutes.
- Add coconut oil if mixture isn't coming together.
- Spoon out mixture and roll into balls (whatever size you prefer). Or press into a loaf tin lined with baking paper.
- If making bliss balls roll in desiccated coconut. Or if pressing into a loaf tin sprinkle with a layer of desiccated coconut.
- These freeze beautifully if they aren't eaten up straight away!
