Cashew cheese is the bomb. Honestly, it is so delicious and actually tastes like a soft cheese! It was such a welcome addition to our diet during our early Full GAPS days when I was avoiding dairy. Nowadays we use it as a dip or an accompaniment to several of our regular meals including Paleo nachos and Vegan Chilli con carne.

Ingredients
- 2 cups cashews I use Honest to Goodness Organic
- 1.5 Tbsp Freshly squeezed lemon juice
- 1 tsp himalayan or celtic sea salt
- 1/2 cup filtered water
- a few sprigs dill optional
Servings: people
Instructions
- Soak the cashews in filtered water overnight. Just use enough water to cover the cashews.
- Drain and rinse well.
- Place the cashews in a food processor together with the lemon juice and salt (and dill if you are a fan).
- Blend until smooth and creamy.
- Add more of less water depending on the consistency you desire.
- Enjoy!!
