Cashew Cheese (GAPS, Paleo, Vegan)
Cashew cheese is the bomb. Honestly, it is so delicious and actually tastes like a soft cheese! It was such a welcome addition to our diet during our early Full GAPS days when I was avoiding dairy. Nowadays we use it as a dip or an accompaniment to several of our regular meals including Paleo nachos and Vegan Chilli con carne.

Instructions
  1. Soak the cashews in filtered water overnight. Just use enough water to cover the cashews.
  2. Drain and rinse well.
  3. Place the cashews in a food processor together with the lemon juice and salt (and dill if you are a fan).
  4. Blend until smooth and creamy.
  5. Add more of less water depending on the consistency you desire.
  6. Enjoy!!
