I have adapted this recipe from one that I found on the Paleo Cafe website when it was still in business as few years ago. I have adjusted the quantities to suit our tastebuds and added in some stock and extra vegetables to make it even more nutrient dense.

Ingredients
- 1.5 kg pork mince free range if possible, otherwise best quality available
- 2 Tbsp coconut oil
- 4 cloves garlic diced
- 3 cm piece fresh ginger grated finely
- 1 large onion diced
- 3 tsp ground coriander
- 1.5 tsp chinese five spice
- 3 large zucchinis diced
- 1-2 medium green capsicum diced
- 6 Tbsp coconut aminos
- 1 cups chicken stock home-made is best
- 2 cups frozen peas
- 1/2 bunch fresh coriander
- 1 iceberg lettuce washed and dried, broken up to form small cups
Servings: people
Instructions
- In a large frying pan heat the coconut oil.
- Add the garlic, onion, ginger and spices and cook until fragrant.
- Add pork mince and cook until browned.
- Add coconut aminos, stock and vegetables (zucchini, capsicum and frozen peas) and cook for a further 10-15 minutes.
- Season with salt, pepper and fresh coriander.
- Serve in lettuce cups.
