  1. Cook the onions, ghee, tomato paste, oregano and garlic, in a small pan until the onions are soft.
  2. Put the onion mixture into the slow cooker or oven-proof dish.
  3. Stir in the diced tomatoes, chicken stock, and wine and stir to combine. Add vegetables. Please note you can either add the beans and peas now or leave them out for now as they don’t require as long to cook and add them with about an hour of cooking time remaining.
  4. Season the chicken pieces with salt and pepper and add them to the crockpot.
  5. Give everything a stir with a wooden spoon to make sure meat and veg are well coated with the juices.
  6. If using a slow-cooker, cover and cook on low for four to six hours. If cooking in the oven place in an oven that has been preheated oven to 160 deg C and cook for 2-3 hours. As noted above you may like to add the beans and peas in later as they don’t take as long to cook – if so, add them in about an hour before the dish is ready.
  7. Enjoy served with rice or cauliflower rice for a low-carb alternative.
