Ingredients
- 220 g Medjool dates pips removed
- 2 medium eggs
- 200 g pumpkin seeds
- 100 g sunflower seeds
- 100 g flaxseeds
- 50 g dessicated coconut
- 1 Tbsp pure vanilla extract
- 1 tsp cinnamon
- 1/4 cups raw honey or maple syrup (optional)
- 1/4 cups frozen berries raspberry or blueberries are my favourite
OPTIONAL
- 35 g protein powder I use 180 Degree Nutrition
- 35 - 60 g cocoa or cacao for chocolate flavoured (add more or less depending on how chocolatty you like it)
Egg-free option
- 1 Tbsp chia seeds

Instructions
- Preheat oven to 170 deg
- Line a loaf tin with baking paper.
- If leaving out eggs prepare chia egg substitute.
- Place dates and eggs (or chia eggs) in thermie bowl, blend 10 sec, speed 5.
- Add remaining ingredients and blend blend 1 min, speed 8.
- Scape down sides and repeat - blend blend 1 min, speed 8.
- Press batter into loaf tin about 1 cm thick.
- Bake for 30-40 minutes until golden brown.
- Allow to cool and carefully release from baking tray and cut into bars.

Sorry for slow response.
I haven’t frozen these before but have frozen similar bars so I feel confident they would freeze/thaw well 🙂
