  1. Separate the egg yolks and the egg whites. Set the whites aside to make sometime else yummy like meringues.
  2. Add the egg yolks and the honey to mixer with whipping attachment and whip on medium speed for 15-20 minutes until the eggs emulsify and become thick.
  3. If using a blender, blend on low speed for for 15-20 minutes until the eggs emulsify and become thick.
  4. You can serve the custard straight away, or store in the refrigerator to thicken some more. You can also freeze the custard as it makes a yummy icy dessert.
  5. Depending on what stage of the GAPS Introduction Diet you are up to, you can add flavours to the custard such as vanilla, lemon, orange or cocoa. Or top it with diced fruit.
