Ingredients
- 4 cups Coconut flakes Organic if possible
- 2 cup almonds roughly chopped
- 1/2 cup cashews roughly chopped
- 1/4 cup pepitas (pumpkin seeds)
- 3 Tbsp chia seeds
- 2 tsp ground cinnamon
- 2 Tbsp coconut oil, olive oil or butter (not df) melted
- 1 medium Egg beaten

Instructions
- Preheat oven to 180 degrees and line two baking trays with baking paper.
- Roughly chop nuts on a chopping board or pop in thermomix or blender and blend for a few seconds (on speed 5) to roughly chop.
- Combine all ingredients except the egg and oil, toss well to spread cinnamon throughout the mix.
- Add in the oil or butter and toss to coat well.
- Add in the beaten egg and toss well.
- Spread in an even layer across two trays.
- Bake for 8-10 minutes until golden brown but check along the way to avoid burning. You may need to give it a little stir with a spatula to brown evenly.
- Once evenly browned remove from oven and cool.
- Store in an air-tight container or jars so well sealed.
