Such a super simple & delicious cookie – these are quite sweet just using the banana, but you can totally add some honey or maple syrup to up the sweetness a little.
Ingredients
- 1 medium apples Or 1/3 cup tinned apple (check ingredients - make sure it is 100% apple)
- 20 g water
- 3 medium ripe banana's peeled
- 3 Tbsp raw honey or maple syrup optional
- 1/4 cups coconut milk (or any milk that suits dietary requirements)
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- 2 cups oats GF if needed
- 1/2 cups sultanans

Instructions
- Preheat oven to 180 deg.
- Line a baking tray with baking paper.
- If preparing your own apple puree - peel and core apple.
- Cut apple into about 8 pieces and put in thermomix.
- Add filtered water.
- Chop for 30 sec, speed 4.
- Cook for 5 minutes at 90°C, speed 4.
- Blend 30 sec, speed 8.
- Or if you are using tinned apple, place 1/3 cup tinned apple into thermie and blend 30 sec, speed 8.
- Add bananas, mill, honey or maple syrup (if using), cinnamon and vanilla to bowl and blend 30 sec, speed 8.
- Add oats and sultanas, blend 30 sec, speed 4.
- Roll dessert spoon amounts of the mixture and place on baking tray.
- Bake for 15-20 mins until golden brown.
- Allow to cool on tray.
