Paleo San Choy Bow – GAPS, Paleo
This delicious nutrient dense meal is an absolute crowd pleaser. I have seen even the fussiest of children enjoy this nutrient dense, yummy meal. I have adapted this recipe from one that I found on the Paleo Cafe website when it was still in business as few years ago. I have adjusted the quantities to suit our tastebuds and added in some stock and extra vegetables to make it even more nutrient dense. *Please note coconut aminos are not considered GAPS compliant. When we did GAPS almost 8-10 years ago coconut aminos were generally considered ok on the Full GAPS diet. Dr NCM has since said they are best avoided until the gut is healed. In saying that, we consumed them without issue when on full GAPS and it didn’t seem to affect our healing.

  1. In a large frying pan heat the coconut oil.
  2. Add the garlic, onion, ginger and spices and cook until fragrant.
  3. Add pork mince and cook until browned.
  4. Add coconut aminos, stock and vegetables (zucchini, capsicum and frozen peas) and cook for a further 10-15 minutes.
  5. Season with salt, pepper and fresh coriander.
  6. Serve in lettuce cups.
