In a large frying pan heat the coconut oil.
Add the garlic, onion, ginger and spices and cook until fragrant.
Add pork mince and cook until browned.
Add coconut aminos, stock and vegetables (zucchini, capsicum and frozen peas) and cook for a further 10-15 minutes.
Season with salt, pepper and fresh coriander.
Serve in lettuce cups.
